SALMON BREADCRUMB AVOCADO BURGERS

SALMON BREADCRUMB AVOCADO BURGERS

Servings: 6 burgers
Prep Time: 15 minutes
Cook Time: 15 minutes
Passive Time: 5 minutes

INGREDIENTS

Salmon Burgers:

  • 1 lb chopped salmon fillet (1/4-inch pieces)

  • 1/4 cup breadcrumbs

  • 1/4 cup chopped cilantro

  • 1 egg

  • 1/4 cup mayonnaise

  • 2 tbsp fresh lemon juice

  • 1 tsp Dijon mustard

  • Salt

  • Pepper

  • Olive oil for greasing the pan

Avocado Salsa:

  • 1 large, chopped avocado

  • 1/3 cup chopped red onion

  • 1 juiced lime

  • 1/4 cup chopped cilantro

  • 1 tbsp extra virgin olive oil

  • Salt

  • Pepper

Other:

  • Burger buns (sesame)

INSTRUCTIONS

Salmon Burgers:

  1. Place the chopped salmon fillet in a medium, mixture bowl and stir in the rest of the ingredients. Let the mixture rest for 5 minutes.

  2. Heat a little olive oil in a large pan over medium heat. Divide the salmon mixture into 6 patties and fry them until they are browned on both sides and just cooked through (about 4 minutes on each side).

Avocado Salsa:

  1. Combine all of the salsa ingredients together and mix well.

  1. Combine all of the salsa ingredients together and mix well.

SERVING

Place a salmon burger patty on the bottom sesame bun. Then, scoop some of the avocado salsa and place on top. Finally, finish with the top sesame bun and serve!
