SAUTÉED PASTA

SAUTÉED PASTA

Servings: 6-8 servings
Prep Time: 10-20 minutes
Cook Time: 20-30 minutes
Passive Time: 0 minutes

INGREDIENTS

  • 3 medium potatoes

  • 1 package penne noodles

  • Olive oil

  • 2 medium, full-sized carrots

  • 1 medium red onion

  • 1 green pepper

  • 1 small, full-sized niu jiao jiao (green cayenne) pepper OR 1-3 jalapeños to taste

  • 2 pieces of chicken breast

  • 1 tablespoon garlic

  • 1 tablespoon soy sauce

  • 1/2 tablespoon salt

  • 1 tablespoon cooking wine

  • 2 cloves of garlic

  • Oil for sautéing

  • Chicken bouillon

  • Special equipment: wok (cooking pot or pan can be substituted)

INSTRUCTIONS

Potatoes:

  1. Boil potatoes until cooked on high heat.

  2. Use toothpick to poke through as a check. The potatoes should be soft, but not mushy.

  3. Set aside.

Pasta:

  1. Cook penne noodles according to package.

  2. Run noodles through cold water in a colander afterward so that they do not become starchy.

  3. Pour olive oil over the noodles in the colander and mix them so that they do not stick to each other.

  4. Set aside.

Vegetables:

  1. Slice carrots into thin, round pieces and set aside.

  2. Chop the onion into quarter-size pieces and set aside.

  3. Chop the green pepper into quarter-size pieces and set aside.

  4. Chop the niu jiao jiao pepper into thin slices and set aside.

Chicken and Marinade:

  1. Chop the chicken into thin slices, about the same size as the niu jiao jiao pepper slices.

  2. Mince the garlic.

  3. Mix the garlic, soy sauce, salt, and cooking wine together.

  4. Marinate the chicken while you are preparing and cooking the other parts.

Sautéing Vegetables:

  1. Heat cooking oil in large wok (cooking pot or pan can be substituted) on high.

  2. If at any point the food begins to burn, turn the heat down to medium, but otherwise keep it on high.

  3. Immediately place chopped onions in the wok until the onions are fragrant and browned a bit.

  4. Add in niu jiao jiao peppers and sauté for one minute.

  5. Add in carrots and sauté for one minute.

  6. Sprinkle salt on the mixture.

  7. Add in green peppers for two minutes until the peppers are soft.

  8. After the vegetables are done cooking, put them aside.

  9. If there are burn marks on your wok, clean them off now and make sure there is no water left on the wok.

Sautéing Chicken:

  1. Heat cooking oil in the wok again.

  2. This time, wait until you see small amounts of smoke rising from the oil.

  3. Then, add in the chicken slices, and let them sit until they are cooked on one side.

  4. Turn the chicken slices over and let them sit until cooked on the other side.

  5. Finally, mix them while sautéing to make sure all sides are cooked.

  6. Keep the chicken in the wok.

Sautéing it All Together:

  1. While the cooked chicken is in the wok, add the potatoes in and mix.

  2. Lower the heat.

  3. Add in the noodles and mix.

  4. Add in the vegetables and mix.

  5. Add soy sauce, salt, and chicken bouillon to flavor and mix.

SERVING

Pour the mixture into a serving bowl and eat the pasta.
