INGREDIENTS

1 pound noodles

2 tablespoons sesame oil, plus a splash

3 and 1/2 tablespoons low sodium soy sauce

2 tablespoons Chinese rice vinegar

2 tablespoons Chinese sesame paste

1 tablespoon smooth peanut butter

3/4 tablespoon granulated sugar

1 tablespoon finely grated ginger

4 teaspoons minced garlic, to taste

2 teaspoons chili-garlic paste, to taste

1/4 cup crushed/chopped roasted peanuts, to taste

1 bunch chopped cilantro, to taste
INSTRUCTIONS
Noodles:

Bring a large pot of water to a boil. Add noodles and cook until al dente (if noodles come in a box, around 10 minutes).

Drain, briefly rinse with cold water, and toss with a splash of sesame oil.
Sauce:

Combine the 2 tablespoons sesame oil, soy sauce, rice vinegar, sesame paste, peanut butter, sugar, ginger, garlic, and chili-garlic paste.

Whisk together until ingredients are evenly distributed.
SERVING
Combine the sauce and noodles in a large serving bowl. Add crushed peanuts and cilantro to the top of the noodles. Enjoy!
